Delicious chocolate cake (vegan)

I had decided to try out a vegan recipe for a while now. Then, last week, I saw this chocolate cake recipe from Nigella on tv, and since it looked so delicious I had to try it out! It was only when I looked up the recipe online that I realized it was a vegan dessert. Perfect! At first I was a bit skeptical, I was so used to using eggs and butter and thought you needed special ingredients to replace this. But this wasn’t the case at all, in fact the cake is pretty simple to make and the taste is absolutely marvelous! The perfect dessert for chocoholics.

Ingredients

  • 225 grams flour (I used spelt)
  • 1½ teaspoons bicarbonate of soda
  • ½ teaspoon fine sea salt
  • 1½ teaspoons instant espresso powder
  • 75 grams cocoa
  • 300 grams dark brown sugar
  • 375 milliliters hot water
  • 75 grams coconut oil
  • 1½ teaspoons cider vinegar or white wine vinegar (I used apple vinegar)
  • 1 tablespoon edible rose petals (didn’t use this, since it’s not the right season)
  • 1 tablespoon chopped pistachios

Icing:

  • 60 milliliters cold water
  • 75 grams coconut butter (I used coconut oil, this worked fine as well)
  • 50 grams dark sugar
  • 1½ teaspoons instant espresso powder
  • 1½ tablespoons cocoa
  • 150 grams dark chocolate chopped (70 % cacao minimum)

  1. After you heated the oven at 180 degrees C you need to start with the icing (because it needs quite some time to cool down). This step is pretty simple. You put all of the icing ingredients in a saucepan and boil the mixture. After turning off the heat, add the chocolate and stir till you have a nice icing. Just leave it to rest and every now and then stir the mixture again.
  2. For the cake: mix the flour bicarbonate, salt, cacao and espresso powder in a bowl.
  3. Then separately mix the sugar, water, coconut oil and vinegar until the oil has melted, after which you can add it to the dry ingredient.
  4. Put the mixture in a tin and bake for 35 min.
  5. I was a bit concerned at this stage about my pastry. It kind of looked like thick coffee (there is water in it) and I was afraid it wouldn’t work out. But the cake turned out great when it came out of the oven!
  6. Let the cake cool down a bit and add the glossing on top. You can add the nuts/roses as decoration. Leave the cake to cool off, till the glossing becomes a bit harder.

I must say the cake is quite powerful, but I’m really into chocolate and therefore absolutely loved it!
